Ingredients

- 1 whole chicken, cut into pieces
- 8 cups chicken broth
- 1 large onion, chopped
- 3 carrots, sliced
- 3 celery stalks, sliced
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/4 cup shortening
- 3/4 cup milk
- Salt and pepper to taste
Instructions
- In a large pot, combine chicken, broth, onion, carrots, and celery. Bring to a boil, then reduce heat and simmer for 45 minutes.
- Remove chicken, shred meat, and return it to the pot.
- In a bowl, combine flour, baking powder, and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in milk to form a dough.
- Drop dough by spoonfuls into the simmering broth. Cover and cook for 15 minutes, until dumplings are cooked through.
- Season with salt and pepper to taste.
Notes
Add a pinch of thyme or rosemary for extra flavor.
