Chicken and Dumplings

A hearty and comforting dish with tender chicken and fluffy dumplings in a rich broth.

Ingredients

  • 1 whole chicken, cut into pieces
  • 8 cups chicken broth
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup shortening
  • 3/4 cup milk
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine chicken, broth, onion, carrots, and celery. Bring to a boil, then reduce heat and simmer for 45 minutes.
  2. Remove chicken, shred meat, and return it to the pot.
  3. In a bowl, combine flour, baking powder, and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in milk to form a dough.
  4. Drop dough by spoonfuls into the simmering broth. Cover and cook for 15 minutes, until dumplings are cooked through.
  5. Season with salt and pepper to taste.

Notes

Add a pinch of thyme or rosemary for extra flavor.
