- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup buttermilk
- 1/4 cup vegetable oil
- 2 large eggs
Instructions
- Preheat oven to 400°F (200°C). Grease a cast-iron skillet.
- In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together buttermilk, oil, and eggs.
- Pour wet ingredients into dry ingredients and stir until just combined.
- Pour batter into prepared skillet and bake for 20-25 minutes, until golden brown and a toothpick inserted into the center comes out clean.
Notes
Serve warm with butter or honey.
